Aunt Bertie’s Southern Lemon Pound Cake Recipe

It’s been a few days since I posted a recipe. I know, I’m a slacker but I have been busy with the New Year and life in general. I hope your New Year has started off wonderful and will remain that way for the rest of the year.

Anyhow enough of my boring ‘blah-blah’ dribble, today’s recipe is a special request from a very, very dear friend of mine who I love so much. Her name is Glenna and she lives in Tennessee in the Knoxville area and loves home grown southern cooking. She has been after me for sometime now, many, many months to post my Granny’s lemon pound cake recipe. So yesterday I went rummaging through my collection of old recipes and I found it to post for her so she can make me one, oh wait I meant make her family one, LOL!

Okay back to the actual hand written recipe for a minute, at the top of the recipe were the printed words “Tupperware Party Cake” on the paper and I had a sudden flash back to what this really was.

It was right then at that moment, I realized that this was no ordinary plain old Lemon Pound Cake! Oh no, this is the one Grandma would roll out for serving when she had her Tupperware Parties for selling her products. Boy did reading this recipe start up the old time memory filled brain wheel-a-turning. This recipe is actually one that was originally brought into the family by my Grandmothers sister, Aunt Bertie. As far as I know this is the ONLY lemon pound cake that was used by my family as it was simply the best tasting of them all.

I can remember those parties with all those blue, yellow, purple and pink bowls of all shapes, form and fashion that were being peddled to all the women at my house during one of those parties. About twice a month we would get invaded by loads of old women, most of whom I didn’t know and had never seen before looking to buy the much wanted and very popular Tupperware products for their homes. Okay, sure you could buy any old plastic bowl, but nothing beat Tupperware then or now.

At these sales events, my Grandmother would serve this Pound Cake recipe with a wonderfully made party punch and finger sandwiches. I have to admit that I was always that little kid you found hiding under the table that was snatching food off and thinking nobody actually saw him do it, yea that was me the little sandwich nabbing brat kid.

This pound cake recipe is a tried and true tested dessert and goes well with any meal, any coffee and heck actually it goes with just about anything, anytime day or night. So do yourself a favor and try it, let me know what you think and if your really delighted make another and send it to me, I would love to have some right now, LOL!!

Lemon Pound Cake

The Store Bought Stuff:

3 cups sugar
5 large eggs
2 sticks real butter or about 8 oz.
1/2 cup vegetable shortening or oil
2 tsp. lemon flavoring
1 cup whole milk
3 cup plain sifted flour
1/2 tsp baking powder
1/4 tsp salt

Frosting:

- 1 (8 oz.) pkg. cream cheese
- 1 lb confectioners' sugar
- 2 tbsp lemon juice

Throwing It All Together:

- Heat your oven to 325 Degrees.

- Sift flour, salt and baking powder together and set on your counter. Cream the shortening, butter and sugar together until light and fluffy.

- Add 1 egg at a time, beating for about 1 minute after each egg. (Important)

- Add lemon flavoring and beat some more. Add portions of dry ingredients alternately with whole milk.

- Beat until completely mixed. Pour mixture into a greased and floured bundt cake pan and bake in previously heated 325 degree oven for 1 hour and 20 minutes.

- Remove from oven and wait to cool before frosting.

- Frosting: All ingredients should be at room temperature. Cream together cream cheese and sifted confectioners sugar. Add lemon juice, 1/2 teaspoon at a time, until frosting reaches spreading consistency.

Yes, I have been after you for quite a while now.. Thank you for the recipe. I cant wait to make it. All I need now is butter, lemon and plain flour and I'm ready to go. Fed Ex will be knocking at your door soon.. love ya
