Traditional Pork Roast Recipe For New Year's Holiday

Oh boy the New Year is getting close isn’t it? Just three days away, wooo hooo!

Excuse my enthusiasm in regard to the New Year, but I have high hopes for the year ahead and I guess my jubilation is peaking out in my blogging, LOL! Anyhow,as previously alluded to in earlier posts regarding the New Year’s Meal around my house, I briefly spoke on my family serving up a Pork Roast with our January 1st. dinner. Why we do it for sure, I really have no clue but I did search around online and read up in some books that I have, and I found this little bit of info that I am going to share with you in regard to pork and the New Year Holiday traditions.

I read that the custom of eating pork on New Year's is based on the idea that pigs symbolize progress in life. What the pig does is push forward, rooting itself in the dirt and mud before moving on. Roast pig is served for New Year's in Cuba, Hungary, and in Austria. Austrians are known to decorate the table with miniature pigs made of marzipan. Different pork dishes such as pig's feet are enjoyed in Sweden while the Dutch feast on roast pork and sausages. Pork is also consumed in the United States, where thanks to its rich fat content, and great taste it signifies money, extreme wealth and prosperity.

So, there you go, after doing lots of reading and learning, I am guessing that’s why we have had it at all of our New Year's family dinners, it’s a “money and luck” food and it just kind of goes along with the collard greens and black eyed peas motif of the New Year’s holiday.

My Families Traditional Pork Roast

The Store Bought Stuff: (Ingredients)

2 1/2 to 3 pound Pork Loin roast.
6 Carrots cut into short pieces.
8 medium Potatoes peeled and cut in halves.
1 large onion cut up.
3/4 teaspoon of salt, divided up.
1/2 teaspoon of black pepper, divided.
1/2 cup of sifted flour.
1/2 cup of melted butter.
3/4 tablespoons of cooking oil.

Optional Ingredients: Mushrooms (I have tried it and they are really good in this dish.)

Throwing It Together: (Directions)

-Rub 1/2 teaspoon of the salt and 1/4 teaspoon of the black pepper on the roast and roll the roast in the flour.

-Next, brown the roast on all sides in butter and oil in a deep, large cast iron skillet.

-Remove the roast from the skillet and drain.

-Cook the onion in the skillet with the drippings until tender and place the roast over the onions.

-Add the carrots and potatoes and sprinkle the remaining salt and pepper over the vegetables.

-Cover the skillet with aluminum foil and bake at 350 degrees for about 1 1/2 hours. Place the roast on a serving dish and place the vegetables around it to make it look all pretty.

-Slice and serve up.

Yes, we were talking about your recipes Billy! I swear I think you could make you a cookbook and sell those buggers. I would buy a cookbook from you. I love cookbooks and you have some great recipes and add a good story along with it and there ya go. Thank you Billy for posting and sharing them in your Christmas cards. You are awesome! Hugs to you and here's to a better year "health-wise" to both of us!
