
Well tonight, I was sitting here in kind of mind numbing trip back in Holiday time, sort of a down home food induced hypnotism, and suddenly I had a very “tasty” memory of a dish that my Auntie Margaret used to make when she came to visit us on the Holidays. She would come to Mobile with Uncle Hugh (My Granny C’s oldest brother) and her son Ray on the Holidays to share in the festivities and enjoy family.
After her arrival, Aunt Margaret would always help both of my Granny’s and Stella prepare and cook for the Holiday meal and indeed it was a most welcome change for me. My Aunt Margaret and Uncle Hugh lived in Tucson, Arizona and by living there she had access to some different kinds of recipes from those cooks out West. I can remember getting "really" excited because if I knew my Auntie was coming to eat with us, it was almost certain that we were going to have a chance to emjoy some different kind of dishes besides the traditional sides and entrees you were served on typical Alabama Holidays tables. Anyhow back to me sitting here at my desk, as soon as the memory came to me, I immediately jumped up and went to my recipe collection and hunted and dug around till I found this recipe to share with you. If you like pineapple and you like cheese this dish is just for you. I know what your saying and yea I know it’s not traditional, but trust me it’s like “Super Duper Duper Awesome!”
It was so awesome that it was a fond memory for me and it stuck in my brain as such till this day. And here it is for you to try and I hope and pray that it becomes a memory for you as well because it’s that good, trust me on this one, you can thank me later.

Auntie Margaret’s Pineapple Casserole Recipe
The Store Bought Stuff: (Ingredients)
-1 Cup Sugar
-2 Cups Grated Cheddar Cheese (Prefer using sharp)
-6 Tbsp flour
-(2) 20 oz. cans of pineapple (in its own juice, drained, keep about 8 Tbsp of the juice)
-2 medium eggs, beaten
Casserole Topping:
1 Cup Ritz cracker crumbs
1 stick melted butter
Putting It Together: (Instructions)
Preheat oven to 350 degrees.
Grease a medium size casserole dish.
Stir sugar and flour together, gradually adding cheese. Add egg and the juice, then mix well.
Pour it all into a dish, top with the crumb mixture.
Then bake for 30 minutes or until it's golden brown and smelling yummy.
