LOL, anyhow what we have here is one of my Grandma’s favorite Saturday brunch meal recipes. She loved to cook this and I guess I know why, it’s so dang easy to make and so dang tasty to eat! That combination just works for me, how about you?
Ok this recipe has a slight Sicilian kick to it so enjoy that, I mean it just kind of goes KA-POW! In your mouth when you eat it, I swear its dang good for what ails you too, if you feel bad this should perk your butt right up and if it don’t I swear you don’t need to worry because your probably already DEAD!!! Yea as in going to the morgue buddy seriously your in trouble with a capital “T” at the beginning.
I usually make my version of this with ½ cup more cheese than the recipe calls for because I am just freaking cheesy like that, to be honest like Chester says “It’s Not Easy Being Cheesy!” Also I love mine with both the chicken and bacon so yea try it several ways and just have fun you can do so many variations to this.
Anyhow let’s get on with this here recipe shall we.
Ingredients:
-2 sliced tomatoes, seeded
-1 cup of grated Swiss Cheese
-1 cup of grated Parmesan Cheese
-1 cup of "REAL" mayonnaise
-1 sheet of puff pastry, thawed or one pie shell.
Optional Toppings:
-1/2 cup of cooked chopped bacon or white chicken breast.
-1 Vidalia onion sliced and caramelized fresh basil
Preparation:
Preheat oven to 350 degrees.
Allow puff pastry of pie shell to come to room temperature then sprinkle with grated parmesan cheese and bake for 5-7 minutes.
Pull from oven and allow to slightly cool.
Mix cheeses and mayonnaise together in a bowl. Using a spatula spread the cheese and mayonnaise mixture onto the puff pastry or shell and then top with sliced tomatoes and optional ingredients.
Bake in oven for 15 minutes or until slightly browned and bubbly.
Top with fresh basil and serve warm.

This does sound good. I made one recently and it was a little bit different. I wrote a Squidoo lens about it and it was fun to read all the comments. Thanks for sharing your recipe. I think I might have to try your version, too!
