
It's my favorite recipe time again.
Back when I was a kid my Grandmothers used to love the “Carnival Season” aka Mardi Gras and that’s when this recipe really was brought out to be used for us family members.
Moon Pies are a “BIG” part of Mardi Gras down here and well my family always said that the ones that they throw in a parade are good but they could make them bigger and better if they tried, and by gosh they had me at “BIGGER” and “BETTER!”
As I am all about that, can't you tell? My Grandmother also always said that packaged Moonpies were good, but home made was better for you and more traditional for us "Mobilians." After all they didn't have pre-packaged moonpies back when Mardi Gras was first started here in Mobile. Did you know we had Mardi Gras before New Orleans? Yea thats right Mobile, Alabama is the "ORIGINAL" first city of Mardi Gras in our country, not New Orleans.
Okay, so the other day I was digging through my recipes and I found this recipe for home-made moon pies and decided I would share with you so you can experience a little of my families Mardi Gras at your home anytime you would like.
So enjoy this recipe and remember BIGGER IS BETTER! :)
Down South Home Made Moonpies
Ingredients:
½ cup unsweetened cocoa powder
½ cup softened butter
½ teaspoon salt
½ teaspoon baking powder
½ teaspoon vanilla extract
1 egg
1 cup white sugar
1 cup evaporated milk
1 teaspoon vanilla extract
1 ½ teaspoons baking soda
1 cup confectioners sugar
1 cup marshmallow cream
2 cups all-purpose flour
Preparation:
1. Preheat over to 400 degrees F and lightly grease a cookie sheet.
To make cookie crusts:
In a large mixing bowl, cream together ½ cup butter or margarine and white sugar. Add egg, evaporated milk and vanilla. Mix well. In a separate bowl, mix together flour, salt, cocoa powder, baking soda and baking powder. Add flour mixture slowly to sugar mixture while stirring. Mix just until all ingredients are combined.
Drop the dough onto the greased cookie sheet by rounded tablespoonfuls. Leave at least 3 inches between each one. (the dough will spreads as the cookie bakes)
Bake in a preheated oven for 6 to 8 minutes, until firm when pressed with finger. Allow to cool at least one hour before filling.
To make the marshmallow filling:
In a medium mixing bowl, blend together ½ cup butter or margarine, confectioners sugar, flavored extract and marshmallow cream. Mix until smooth. Assemble pies by spreading 1 to 2 tablespoonfuls of filling on the flat side of the cookie, then covering filling with the flat side of another cookie.
Then EAT!
